To make truly great wine, as we believe Raul does, you must have fantastic grapes and these Mencia grapes come from head-pruned 120 year-old vines from a 3.2 hectare parcel. The soils are clay and the altitude reaches 540m with steep slopes. Raul practices minimal intervention in the vineyard, letting the combination of old vines, good difference between night time and daytime temperatures and the terroir do its work. Raul also uses biodynamic principles with regards to pruning, picking and other vineyard procedures.
Once hand-picked and carefully transported to the winery, the grapes are crushed and pressed. Fermentation and post fermentation take place in egg shape barrels or 'fudres' from Austria of 1,500l capacity made from French oak. The wine is aged on its lees for 12 months. |

| Without doubt one of the Indigo teams favourites and punches well above its weight in terms of value (we only wish we could get more!) The nose is dark cherries, with mineral and herbaceous hints with a touch of cocoa. On the palate, the rich dark fruit show through along with some of the pleasing slightly bitter chocolate but with a zippy mineral freshness and acidity through to the finish that leaves the palate crying out for more. |
