Martin Damm has imported Burgundy and other top wines from France and Spain to Denmark for many years, getting to know producers and spending vintages with the likes of Grivot and Bize. This inspired him to buy some small plots and an old stone bodega in Ribeira Sacra in 2017. Martin's project, Adega Damm, is based around two villages within the Amandi sub-region, Amandi and Doade. He has two vineyards with 80+ year old vines in the wild granitic terrain of Amandi. The vines were originally planted on terraces, but they've mostly been abandoned, and he has spent the last six years rebuilding them with the help of some of the locals. Otherwise, he does the majority of the vineyard work himself, farming organically, cutting back the weeds and harvesting by hand, up and down the steps. Martin vinifies parcel by parcel. He works with as little intervention as possible in the cellar: he ferments with natural yeasts in steel tanks; the wines are transferred to neutral barrels for malo; and spend around a year in two-three year old Burgundy barrels with minimal racking and very low SO2 additions before bottling. He's looking to make refined wines with authenticity and elegance that will evolve gracefully over time.
