Colet Navazos is a collaboration between Equipo Navazos, famous for discovering unique old botas of sherry in Jerez, and Colet. The idea is to experiment with bringing some sherry character to Penedès sparklers. This is 100% Xarel.lo with small amounts of flor yeasts and Pedro Ximenez in place of dosage. The result is a truly unique dry sparkling wine, with unmistakable, but subtle, sherry aromas, and lovely elegance and balance.
