From vineyards in the foothills of the Appenines, the Ecce Draco Bianco is made with the local Trebbiano Romagnolo, with some Chardonnay for texture and Sauvignon Blanc for freshness and acidity. Aging in old, neutral tonneaux barrels adds a savoury complexity.
