Made with Jacquère from an old vineyard in the village of Saint Jeoire Prieuré, a few miles down from Chignin, this is Paul’s zestiest, saltiest wine. Green apple and quince combine with a herbal, freshly-cut grass note to create a tense, nervy white that screams aperitif.
