Dominik produces two distinct whites, he refers to Pedra de Guix as his “oxidative” white, while Terra de Cuques is his “skin contact” white. Pedra de Guix is a blend of old-vine Pedro Ximénez, Macabeo and Garnacha Blanca, all from different plots - the result is fresh, mineral and expressive, reminiscent of white Hermitage.
