Chene is the home vineyard for Gina’s project, which she has converted to biodynamics. Pinot for this wine is planted on the steepest slope of the vineyard. Vines produce small clusters and ripe stems allowing a 70% whole-bunch ferment, giving a spicy perfumed wine with crushed chalk, crunchy cherries and violets. Gina describes the tannins in her Pinot as: “More angular, darker than classic Burgundy”. Which she attributes to the hard, shallow top soils.
