This precise, saline multi-vintage prestige cuvée, named after Dermot’s grandmother’s brother, is 60% Chardonnay and 40% Pinot Noir, fermented 50/50 in neutral oak and stainless steel. A small amount of the 2009 Trouble with Dreams, which is kept in bottle on lees, is added to the dosage, adding another dimension to this rich and complex wine. It evolves in the glass with smoke, orange pith, honeysuckle, and a hint of nutmeg, and is sure to evolve beautifully over time.
