Palo Cortado was a type categorized by the Almacenistas during the biological aging of wines. Casks containing wine which naturally developed a lot of body, aroma and oxidative character, were marked apart, by putting a chalk mark across the stripe. The Palma was Cortado – cut. La Barajuela is salty with roasted nuts and a very fine, ripe fruit finish.
