Terra de Cuques is a white wine made in the same way that Dominik makes his reds: whole clusters are macerated on skins for two weeks, before pressing into a concrete tank where they finish their fermentation. This method infuses the wine with the phenolic compounds of the skins without extracting harsh tannins.
