The Moscato grapes are hand-harvested at full ripeness, then left to dry outdoors on special trellises in the winery’s sun-drenched baglio — a traditional Sicilian courtyard. Aquavite, distilled from Marabino Moscato fruit, is added to create a complex fortified style. The result is a passito-style wine with pronounced flavours of raisin and dried apricot, balanced by a moreish, fresh acidity and a honeyed finish.
