El Risco Blanco is a blend of Macabeo with a dash of Garnacha Blanca from old, high altitude vineyards in Campo de Borja. Winemaking is simple: both varieties are whole bunch pressed together, the free run juice is allowed to ferment slowly, the wine ages sur lie for up to seven months to add texture and salinity.
